4 to 6 slices of provolone or Swiss cheese (optional)

Instructions
Prepare the onions:
Begin by thinly slicing the onion.
Heat 2 tablespoons of vegetable or olive oil in a large skillet over medium heat.
Sauté the sliced onions until they become soft and develop a golden-brown caramelization, typically taking about 7-10 minutes.
Add the garlic:
Add minced garlic to the skillet once the onions are caramelised.
Sauté for an additional 1-2 minutes until the garlic becomes fragrant. Be careful not to let it burn.
Cook the shaved steak:
Create space in the skillet by pushing the sautéed onions and garlic to one side.
Place the shaved steak on the other side of the skillet.
Season the steak with a pinch of salt and black pepper.
Sear the steak:
Cook the steak for about 2-3 minutes on one side until it develops a nice sear and begins to brown.
Flip and finish:
Flip the steak to cook the other side for 2-3 minutes or until it reaches your desired level of doneness.
If you're using cheese, place a slice of provolone or Swiss cheese on each portion of cooked steak while it's still in the skillet. Allow it to melt slightly.
Assemble the French Dip Sandwiches:
Slice the French rolls or baguettes horizontally, creating a top and bottom for each sandwich.
Place a generous portion of the cooked shaved steak (with or without cheese) onto the bottom half of each roll.
Serve with Au Jus:
Serve the French dip sandwiches with a side of au jus sauce for dipping.
Pour the au jus sauce into individual dipping bowls or ramekins.
